Regular VIP ($85 plus a fee) gets 11 a.m. early access for an hour head start, chef mingle and bonus Pig Island t-shirt. “Pig Island’s bar and beverage menu is better than ever this year, with eight drink stations including craft beer from Flagship Brewery, Six Point, Killsboro and hard cider. VIP Tables are a flat $850 for reserved seating, 11 a.m. access and first bites from the grill along with eight Pig Island T’s. Food and beverage — booze, local beer and soft drinks — are included in four tiers of ticket prices. The whole hog will be unveiled by Olchefski’s BBQ of Ohio. And the Pork Mafia Street Crew features Phil Wingo, Staten Island’s own Mario DiBiase (owner of Brooklyn’s Sotto Voce Restaurant) in a collaboration with visiting Chef of the Bayou, a.k.a. @NolaCrawfishKingBBQ of New Orleans. Early Bird Tickets ($55 plus handling fee) afford general admission at a discount if ordered on or before Aug. 14. General Admission ($65 plus fee) includes an all-inclusive food and drink ticket with noon admission. This will be the 13th such event, a production by Jimmy “Pots and Pans” Carbone. It also will be the fifth year in a row the event’s community partner is the Friends of Firefighters, Inc., and will feature firehouse chef Nick Bavaro, winner of the 2022 Brisket King NYC People’s Choice Award. As for the meatballs, they were rather strong in terms of porkiness so you might want to prepare yourselves for that. The broth was refreshingly light but still flavourful at the same time, though I wished it packed just a tad more flavour. There was also a copious amount of pig skin that was chewy but not too tough. I noticed quite a few elderly folks approaching the stall to place their orders, with half of them preparing their own takeaways boxes for the kway chup. They were also cleaned rather well, soft and easy to eat. The pork belly chunks had a good balance of meat and fat, making it quite tasty.
